Cornbread Salad

CORNBREAD SALAD

  • 1 package cornbread mix prepared, cooled, and crumbled
  • 1 can pork and beans
  • 1 can sweet corn, drained
  • 2 diced tomatoes
  • 1 cup green pepper, diced
  • 1 cup onion, diced
  • 15 strips cooked bacon, crumbled
  • 2 cups grated cheddar cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 packet ranch dip mix

DIRECTIONS: Layer all but the last three ingredients in a clear glass bowl. Mix mayonnaise, sour cream, and ranch dip together and spread over the top. Garnish with green onions, bacon bits, or cheese. Chill and serve. ♥

  1. This one needs to be passed along – I’ll tell hubby. See, when we got married (has it really been 10 years already???), it was the perfect match. He likes to cook, and I like to eat.
