These easy, yummy cookies were a huge hit at our family Christmas celebration. Luckily, I was able to grab a snapshot before they all disappeared! Here’s the recipe:
In a large pan, stir together:
- 1 tsp. vanilla
- 3 T cocoa
- 2 cups sugar
- ½ cup milk or half-and-half
Bring to a boil and continue boiling for one minute. Remove from heat and stir in:
- ½ cup peanut butter
- 1 cup coconut
- 2 cups quick oatmeal
Drop by spoonsful onto waxed paper. Cookies will set up as they cool. P.S. I recommend making a double batch . . . they won’t last long! ♥

Double? You mean triple don’t you? My son learned to make these in cooking class after which they became a family favorite, and one of the few cookies I can make in my own apartment.

No Bake Cookies are fave at our house!! We have to be sure not to make them on a humid day, though, cause then they won’t set. (One of the joys of baking in the muggy south…)

I make a similar cookie that my family loves, but my recipe doesn’t call for coconut. I’ll have to try your recipe the next time I make these. The coconut sounds really good.

My family has a very similar recipe, and they’re TOO easy to whip up for a craving! But coconut – didn’t think to add that in there!
Coconut was my mom’s *secret ingredient* for these . . . it really does give them a lovely flavor and bit of a crunch! 🙂

Q – Every time I see this recipe I chuckle with memories. In my college dorm in the late 60’s and early 70’s we weren’t allowed to have hot plates to cook with. A few of us got popcorn poppers instead, the old electric type that looked like slow cookers. We used to make these cookies in our popcorn poppers! So, so good!
