Chocolate Peanut Butter No-Bake Cookies

CookiesThese easy, yummy cookies were a huge hit at our family Christmas celebration. Luckily, I was able to grab a snapshot before they all disappeared! Here’s the recipe:

In a large pan, stir together:

  • 1 tsp. vanilla
  • 3 T cocoa
  • 2 cups sugar
  • ½ cup milk or half-and-half

Bring to a boil and continue boiling for one minute. Remove from heat and stir in:

  • ½ cup peanut butter
  • 1 cup coconut
  • 2 cups quick oatmeal

Drop by spoonsful onto waxed paper. Cookies will set up as they cool. P.S. I recommend making a double batch . . . they won’t last long! ♥

  1. No Bake Cookies are fave at our house!! We have to be sure not to make them on a humid day, though, cause then they won’t set. (One of the joys of baking in the muggy south…)

  2. I make a similar cookie that my family loves, but my recipe doesn’t call for coconut. I’ll have to try your recipe the next time I make these. The coconut sounds really good.

  3. Q – Every time I see this recipe I chuckle with memories. In my college dorm in the late 60’s and early 70’s we weren’t allowed to have hot plates to cook with. A few of us got popcorn poppers instead, the old electric type that looked like slow cookers. We used to make these cookies in our popcorn poppers! So, so good!

  4. Granddaughter Gracie and I made these tonight and they were so good that we are sending the rest to work with Grandpa tomorrow so we don’t eat the whole batch!
